I am Thankful for Pumpkin Pie!

I know, I am late…. Thanksgiving day is usually a very quite and reflective time for me. The boys hunt and I cook and everyone gets together for dinner around 5:30 and we spend the rest of the evening watching the little ones play and  talk shop. So I usually have the day to myself, and Tom the turkey, but some how this year it just did not happen. One reason was the new bread maker that I received as a birthday present earlier this month.  I will be posting what I made yesterday once I have mastered ” dinner rolls”  they tasted great but looked a little funny.

So, like most people I just ran out of time to share that I am thankful for Pumpkin Pie. 

Yes, I know it sounds a little childish but pumpkin pie is really what I was thankful for this year and I will tell you why.

It all started with a my husband Tom… He really is my hero in life and on my Barnwood Builder episode. He helped me till a small garden at the other house that we were living in last summer. In that garden Tom and Christopher help me plant 3 pumpkin seeds. From those seeds grew 13 pumpkins, I think, if I can remember correctly.

Then after a long summer I was so thankful that Cody my older son and my granddaughter Paige and daughter-in-law Jamie were able to come help us harvest everything in the garden including the pumpkins. It took hours to bring in everything that grow well that year. We had sweet potatoes to dig, pumpkins to pull and tomatoes and peppers every where. The baskets were full,the wagon was full and I had a lot of work getting these pumpkins ready to eat.

I aged the pumpkins in the cool of our porch until Halloween came. I had my foot surgery just days before Halloween and I was off my feet when the holiday rolled in.  Again Tom help me out with the most important Halloween tradition of  carving at least one of our pumpkins.  Christopher and Tom spent one evening craving a couple of pumpkins and decorating the porch with them. I was so Thankful to see them and see the smiling face on my little Christopher’s face when he lighted them up.

From the rest of the pumpkins I made pie filling. So in the weeks leading up to Thanksgiving I cooked and canned most of those pumpkins. The house smelled wonderful for days as I roasted on the first day and pureed the next. Finally I cooked and added spices to the mixture and put it in the jars with love. Thankful that Christopher had a school to go to and Tom had a job to work at, as the huge mess in my kitchen grew. 2 days and 6 hours later the jars sealed and I have jars of home-made pumpkin pie filling.

Then after moving our family over the long cold winter,we  stared working on the house.  I am so thankful for our new home. This was my first Thanksgiving in my new to me kitchen and the first time I drug out the good dishes and glasses in years. It was a wonderful reason to take out a jar of that pumpkin pie filling and make a pie to celebrate.

Finally, I am thankful for every person who sat at my table, for every opportunity I have to spend time with them. I am thankful for those who are missing this year and the ones that are in heaven. I am thankful for the money to buy the meal we ate and most of all I am thankful for pumpkins and pies.

Venison, Wild Mushroom, Lasagna

Deer season started today, so to honor my husband and all the wild game he provides for my family, I made this wonderful venison  meal.

I love to cook with wild foods and two of my favorites are Venison and Wild mushrooms. I had a few pounds of ground venison in the freezer from last year and about a pound of frozen wild mushroom from summer.The mushroom I am using is a  Chicken Mushrooms ( Laetiporus- Cincinnatus) the orange verity. I also had home-made Marinara sauce out of the garden. All that I needed from the store was cheese and noodles.

This was the foraged mushroom that I had a portion of frozen.

The stems of the mushroom can be woody, I saute’ them  chopped in butter with a little onion and garlic before I brown my meat. It can take several minutes to make the mushroom stems soft. I like to use bigger pieces so they do not lose their texture in the cheese mixture. I cook the mushroom mixture a little longer then what it takes to soften the onions. Set it aside to wait assembly of the lasagna.

I then brown about a pound of ground venison with a little oil to keep it from sticking to the pan.

Because Venison is so low in fat the moister you see in the photo is not oil but moister from the meat. It will cook off and I add Salt and little pepper and one quart home-made Marinara Sauce or your favorite sauce. Adding 1/2 cup water to store-bought sauce or 1 cup to my thick sauce to add the additional moister for Oven Ready Noodles. If you use regular cooked noodles you would skip the water.

Then mix together in a large bowl the Cheese mixture of your choice. I like ricotta cheese in my lasagna for two reasons. First it has a lower moister content and will not get really runny with the Oven Ready Noodles. Secondly the flavor to me is better when mixed with Italian seasonings.

Then add sauce to venison and place about 1/2 cup in bottom of 13 X 11 pan cover with uncooked noodles.

Cover noodles with cheese mixture and top with sauteed mushroom and onion mixture

I then top this with another row of Oven Ready Noodles and cover the top with more venison sauce topping that with mozzarella and Parmesan cheese. Back in the oven lightly covered at 350 degrees for 60 minutes and let stand at least 15 minutes after removing from the oven. This allows the cheese to set up while cooling and keeps the lasagna firmer when cut and not too hot to eat.

Ingredients

1 pound wild mushrooms

1 med onion

1 teaspoon or two cloves garlic

2 teaspoons butter

1 pound ground venison

1 quart or more Marinara sauce

1/2 cup water

1/2 teaspoon salt and pepper

1 pound ricotta cheese

2 cups mozzarella cheese

1/2 cup fresh shredder Parmesan cheese

2 eggs

1 1/2 table spoons Italian seasonings

1 teaspoon garlic salt

1 teaspoon parsley

1 box Oven Ready Noodles… the non-boil kind

Directions

  1. Saute chopped mushrooms, onions and garlic in butter a minute or two more than when the onion becomes translucent.
  2. Brown 1 pound of venison in large skillet, add salt and pepper and 1 quart of Marinara Sauce. Simmer until warm and bubbly.
  3. In a 13 X 11 backing pan spread 1/2 to 3/4 cup meat sauce in bottom of pan, making sure to cover entire bottom of pan adding more if needed.
  4. Cover sauce with one layer of Oven Ready Noodles.
  5. In large bowel add all but a handful of cheeses. Ricotta, Mozzarella, Parmesan, and two eggs. Mix until mixture is smooth and creamy.
  6. Add Italian seasoning, parsley, garlic salt to cheeses and mix.
  7. Scoop cheese mixture over Oven Ready Noodles and smooth out.
  8. Cover cheese with mushroom and onion mixture, spread evenly cover with 1/2 cup sauce below noodles.
  9. Cover with another row of Oven Ready Noodles and top with sauce, topping with left over cheese.

10.Cover loosely with tin foil  and bake for 1 hour at 350 degrees. Let cool for about 15 minutes before serving.

 

So with high hopes I can fill my freezer again this year with fresh organic meat..best of lucky Tom, Cody and Bill may you hunting season be filled with the joy of nature and thrill of the hunt and the knowledge that you have provided another year of food for your families.

Salt Dough Holiday Ornaments with Kids of All Ages

My older son Cody has always made my life more fun with his unexpected ideas. So you never know what the boy has planned when you see him. Some times its,”Mom you got to see this” or “Mom how do you make this” or “you need to try this”… it is always so much fun when he is around. So the weekend before Halloween ( at little late I know). He arrives at our house for the usual Sunday Dinner with bags of stuff in his hands and the granddaughter  so excited trailing behind him. My daughter in law Jamie explains the Cody wants to make Play-Dough at my house that Sunday afternoon ( he never warms me we are going to make a mess). After looking over the ingredients I quickly realized that what he had brought was not Play-Dough ingredients buSalt Dough ingredients.

Salt dough is a wonderful inexpensive way for kids of all ages ( 4-48 this day) to mold and bake decorations, figures, or models. This dough can be colored and baked to make the craft hard and dry so it will last for years. The hard dough decorations can be painted and sealed with any clear coat. The dough is non-toxic and eating it will not hurt the youngest of artist… but be warned it is very salty.

So with all of us in the kitchen together  we mixed up a large batch of dough. Cody then took the dough and broke it into smaller pieces and added food coloring. All I had on hand was Easter neon colors so we had very bright colors to work with. We gave Christopher and Paige each 4 small bowels of colored dough and turned them loose with my cookie cutters, rolling-pin, tooth picks and watched the fun. With in minuets we were all making things too…

I even joined in the fun and made some decorations too. The decorations had both a Christmas feel and a Halloween feel so we covered both holidays with some of our creations. When all the dough was gone I put two full cookie sheets in the oven to bake. I did notice that we made very thin decorations and they do not take as long as the directions say to dry. Worried that at some point they would burn, I reduced the length of cooking time 15 minutes.

So have fun this holiday season, break out the cookie cutters that have not been used for a year and make some lasting decorations with the kids. The kids and grand kid played for about 3 hours making things and baking them before dinner. Now both little ones have home-made decorations for this years trees.

 

Salt Dough: hardening dough

4 cups flour

1 cup fine crystal salt not sea salt

1 1/2 to 2 cups water

mix until can be worked with fingers like heavy bread dough

bake finished work in oven at 300 degrees for up to an hour.

( I bake ours for about 45 minutes because they were so thin)

let cool and paint, glue and decorate and enjoy!

A Blogging Junky and the Blogger Monster on My Back.

How many of us bloggers write more than one blog? How many write poetry and flash fiction on top of the blogs that we all generally write each week? How many have several topical blogs or work blogs? I am guessing hundreds if not thousands of us do. It must seem crazy to the outside non-blogging world that any of us would write more than we have to. I am thinking that this writing thing is a habit or an addiction… something like junkies feel.

It all starts out with your friends doing it. They share their stories and some tips on how to take that journal of thoughts or notebook of ideas and turn them into some thing much cooler, a…. blog.

Yea, you get to be one of the cool kids. 

You get to try writing on a real blog, where people you have never known before will read and write back to you. You get that first high. The one that comes from writing that first page and first post. Wow you get to hit the  publish button and you are now a writer. Not the hide under the bed kind of writer anymore,but a writer that is now on the World Wide Web, out their in the universe for everyone to see.

The first LIKE changes everything, just like a first high would.

Someone out their LIKES me and wants to share some good stuff with me. I am liked, I touched some one,I am part of group, I am not alone, that is how they hook you. You can’t believe that some one out their understands you… so you write more and more. At some point  you gain a follower or two. Two people who read your nut ball stories and rambling thoughts regularly and may even drop you a note about how wonderful your writing is and how true your statements are. You are in deep now, you schedule posts, maybe research topics and take colorful photos to gain more followers and get more LIKES.

It is official it’s a habit,you have a Blogger Monster on your back.

You think about writing when you aren’t doing it. You talk to people about it when you are doing other activities and wonder how you will fill you time if the power goes out and you can’t get to the computer that day. You spend time sending notes to other bloggers that your personal friends and family know nothing about…. Sending smiley faces and recipes back and forth at all hours of the night and day.

It is a full-blown addiction.

So what do you do? Stop writing? Could you if you wanted to? Do you want to ? I am guessing like myself that in many cases the answer is NO!  I enjoy it too much and it fills a large gap in my creative life. It gives too much back for me to stop. So I am wondering if I am a WordPress Junky, If one blog is just not enough. Maybe I just have more to say deep down inside, about even more important things or more edgy things that I may need to share with a whole different group of people.Maybe I just need to write more than one or two posts a week … my  posts now are  just not enough.

I see where this maybe going… it maybe true…. I think I have a Blogger Monster.

I think it is time to spread myself out a little farther, to try to write something different. I want to experiment with more styles and topics. I want to try poetry and fiction and short stories. I hear that is where the really cool kids hang out. You know who I am talking about, where they create just for the fun of creating. Heck, those kids don’t even really try to teach you anything they just let the words just sore.

I am not even sure there is a treatment or a cure for what is happening. I am guessing the one thing that will help is to write more. I will add another blog to my writing life. Not sure what it is all about yet but it will be a fiction site where I can work out short stories and poetry with the hopes of one day making my love of books and words come together some how. That somewhere out there are others who love West Virginia, its people,and places and want to hear some more of her stories. Maybe then when I get to spend more time with this monster  so I can sooth it and make it lie down for a long rest. Until then I guess I will just try to keep posting here every week and working on getting some thing up and running where I can write fuller deeper stories.I hope to bring you all along when I am ready, That is if you want to go down this path with me. I will let you know where and when this addiction has landed me as soon as I settle down. In the mean time this mountain mama will  post every week and be getting ready for the fall and winter seasons. Time flies and I have so much to still do.  Jolynn

Seeds, Magical, Mystical and Divine

Yesterday as I stood at the dock of our local feed store, Southern States, I watched small pellets of snow falling in the cold morning air. Yet when I looked closer at the mysterious dust that slowly covered the roof of my car and the shoulders of my sweater I realize that the white dusting is not snow at all but seeds. Seeds are wafting down through the air from the milling machine that I hear grinding away in the loft of the steel building. Some of the pieces appear as crushed corn, others are millet, cotton seeds and shells from soybeans. The mixture is for bird seed, I think, and the finches swoop in, landing on top of a stack of pallets at the end of the dock to steal what no human would want. My hair and sweater  are white in a matter of minutes and the older farmer standing next to me laughs at the sight of our hair white with corn dust. What a strange and wonderful way to start my day. It Reminded  me how wonderful, powerful and mysterious seeds are and what they can mean for us.

When I returned from Southern States I also started to clean out our garden. Trying to gather up the last of the died plants. The tomato vines,the pepper stocks, the Zinnia stems and a rotten watermelon are all that is left of the work that my garden did over the summer. As I move through the rows I come to Christopher’s Zinnia’s that bloomed like wild this summer. They died in mid bloom by a hard frost about a week ago. They are all that remains standing in the garden and still have seeds in side the brown dead blooms.  I though to myself that I should gather up some of the seeds for next year before the birds discover that in side this wrinkled crusty shell  there lives a hundred small seeds.

So I gathered up about 12 seed pods and headed to the house to pull them apart. Remembering that before the frost I pulled the last few rounds of green beans off the plants to store as seeds for next year. I have been waiting for them to dry  so I can shuck the seed pods to store them for planting next year. So my garden will be full of green beans again.

Then over the weekend my family also gathered the chestnuts and hickory nuts in our yard and the surrounding woods. this means I will have a few for winter cooking. The hickory nuts looked like they were ready crack open their hard shells and begin to grow if only the weather was getting warmer not colder.

What still surprises me every year that I plant a garden is the power inside a seed. That each one is the renewed life of what was lost only a few months ago. It really should come as no surprise to any of us that we instructed by Dr’s to eat more seeds, get more of our protein from seeds and try to get our oils from seeds instead of animal fats. They hold inside their shells the power and energy to renew life. They are the grand magic that holds with in them all the secrets of our living world. With just a little water and warmth, they begin the life cycle again in hopes that life will continue again, that we will see the spring flowers, see the fruit of their labor and again reap a harvest. It is miraculous that some how every thing we see in nature comes from a seed.

The seed is also one of the most used symbols in religious texts and a common metaphor used for writers and poets. It is the seeds ability to transform from a small brown stone, shedding its shell, pushing through the hard earth and reaching up to grow, that is stunning. How they survive the elements and sprout leaves and roots to one day become some thing enduring that fascinates me. It is hard to believe that about 6 months ago, this was just an avocado pit, a seed, that I lovingly planted in hopes of one day having an Avocado tree of my own.

One day the tree will be taller and stronger than me. It should live longer then I do and could produce fruit for generations. It can produce more seeds than we can count and one day may be the parent to a hundred trees. So with in one seed is the energy and potential to create hundreds if not thousands of trees. This is why the great texts  use the metaphor of the seed. To teach us about life, death and rebirth. That nothing really ever ends that it is only a transformation from one form to another. The seed lives in the fruit of the living tree, becomes the hardened seed when death and harvest comes, to sprout and regenerate when the seed roots,and finally grows sharing its new life. If only we could look at our lives in the same way and see the beauty that is found in the seed. That death and life are only part of a greater pattern of events. That life is the bounty of nature and that we are just simply seeds at heart.

Emotionally Drained and Ready for Change

The Month of November has really hit my family hard. It has brought us through a whirl wind of emotions and challenges and changes. The days have blown by with funeral activities and children’s parties. With our time spent comforting grieving family and friends,followed by happy school children in costumes, and a sick body fighting a cold. I spent my 47 birthday watching the episode of Barnwood builders that I helped to create holding my breath. Trying not to cry at the wrinkles and lines on my face and the heavy body that I still have not dealt with after my foot surgery. I have felt the deepest most satisfying happiness and the most painful sadness, all in a matter of days…and I am tired.

Most of you already know that over  a year ago I quit my outside job and went home to take care of Grandma Powers around July of last year. I then followed that with a foot surgery to remove a bone that would not heal after 13 months in a cast. We then moved over Christmas and started a remodel project in the end of April and spent days filming with the Barnwood builders. Then we also got the news that Grandma’s cancer was back and things looked bleak for the future. We finished our remodel and the filming of our show in Aug of this year and watched as grandma’s health began to fail, knowing that we would only have a few months with her. Then as Nov came and went we lost Grandma… I was supposed to celebrate Halloween ( my favorite holiday) With little Christopher at his school with a party and Saturday night take him trick or treating…I just could not do it. With a cold and broken heart I just wanted the comfort of my home and time with Tom. We  handed out candy and enjoyed the beautiful night air on the porch. My faithful son Cody took his little brother out for Halloween tricks and treats and made memories of their own. Then my birthday and the show airing. I was so thankful to have family and friends celebrate with me. Yet… I worried, so nervous, that somehow I would look like a fool on national TV. I would some how not be “Me”. In the end it was good. It was more “Me” then I care to admit, I look my age and I love these mountains and it shows right there on national TV. So I laughed along with the boys at the end of the night. I really might be just a Hillbilly at heart.

I know I have had more adventures in the last two years then some have in a life time. I have felt more in those two years then I ever thought was possible. I have laughed,cried, felt peace and the hand of God working in my life. I have hugged my children harder and been blessed more than my imagination would let me believe.I have sacrificed my time and money to be a caregiver and a mother. I have worked for no one, but for everyone, and not received a penny and it was all worth it in the end.

Some people think riches come in the form of a paycheck or money stored, but it doesn’t. Riches are experiences… and memories…… and dreams shared. They are the only thing that is left in the end. Money can not be taken to the other side… only love can. I have spent the last few years of my life making memories that I will never forget and shared love that I can never get back. I have forgotten about the “Me” and focused on the “We” and have reaped what I have sown in heaping amounts. These years have not hardened, but softened me, softened my heart towards God, my Family and My Friends and even my body. It has been a wonderful time of learning and growing as a person, a woman and mother. 

I am tired now, I will rest a few days, maybe a month, the days will slowly be filled again with work and school and children. I will let life lead me for now, to a new career, to new schooling, or who knows where, but I am ready for a change. That will start me on a new adventure with new memories and more love.
